Ingredients
1 large onion, finely chopped2 gloves garlic, minced
2 cups red lentils rinsed well
6 cups of vegetable broth
1/2 teaspoon turmeric
1-2 teaspoons curry powder
big bunch spinach, finely chopped
1/2 cup coconut milk
Salt and Pepper to taste
Method
Heat a little water in a large soup pot. Add onions and saute over medium heat until translucent. Add garlic and continue to saute until both are golden.Add vegetable broth, followed by lentils and seasoning. Bring to boil, lower heat, cover and simmer till lentils are mushy (approx 20 mins)
Remove from heat and add spinach, stir through and allow to wilt. Season to taste and serve with coconut yogurt and fresh coriander.
NOTE: Substitute Kale for Spinach.
